In this recipe I have made kesari with poha. This Poha kesari is made with flattened rice(poha), jaggery, ghee and flavored with cardamom powder and ghee roasted cashewnuts and raisins. It has a soft, melt-in-your-mouth texture and a sweet, aromatic taste. Poha kesari is typically served as a dessert during special occasions and festivals. Ingredients
Poha-1 cup
Broken cashewnuts-15
Raisins-15
Water-1 1/2 cup
Powdered Jaggery-1 cup
Cardamom Powder-1 tsp
Ghee-5 tbs
How To Make Poha Kesari with Jaggery
- Firstly, heat a pan and add poha in it. Then dry roast it in low flame for 2 minutes.
- Once it’s cooled down completely, transfer it into a mixer. Then grind it into a coarse powder
- Further heat 3tbs ghee in a pan. Add broken cashew nuts in it and sauté it until it turns golden brown in color. Then take it out.
- Next add raisins in it and roast it until it puffs up. Then take it out.
- Now add 1 1/2 cup water in it and let it boil.
- Once the water started to boil, add the powdered poha in it and mix it well to avoid lumps.
- When the poha is cooked well and water is absorbed, add the powdered jaggery in it.
- Then mix it well & let the jaggery dissolve completely..
- Once the jaggery syrup is absorbed well, add cardamom powder and ghee in it.
- Keep stirring until the mixture starts to leave from sides of the pan.
- Finally add roasted cashew nuts and raisins in it and mix it well.
- Poha Kesari is now ready to serve
