Today I would like to share with you the recipe of a healthy and nutritional snack that is rice laddu. This rice laddu requires only few ingredients and can be made within few minutes. Most of the sweet snacks are made with sugar but in this recipe of the rice laddu I replaced sugar with jaggery for making it as a healthy snack. I am not making any jaggery syrup in this recipe. I just grinded powdered jaggery with rice powder. Here I used Kerala matta rice but you can use any type of rice. In this recipe I am not using coconut so the shelf life of this laddu will increase, but if u want you can add coconut for enhancing its taste. Ingredients
Rice- 1cup
Powdered Jaggery- 1cup
Cardamon Powder-1tsp
Cashew nuts, chopped-5 to 6
Method Of Preparation
- Wash the rice couple of times
- Drain the water completely
- Put it on a strainer for 10 minutes
- Heat a pan and add the strained rice into it
- Roast it in medium flame
- Once the rice started to puff up and roasted well switch off the flame
- Transfer it into a plate and allow it to cool down
- Once cooled down add it into a grinder
- Grind it into a fine powder
- Add powdered jaggery into it
- Grind it with the rice powder
- Transfer it into a plate and add cardamon powder in it
- Add chopped cashewnuts into it
- Mix everything well
- Take a portion of mixture in your palm and press it with your fingers to make tight balls
- You should make it tight enough to shape it into a round laddu
- Healthy rice laddu is ready
