Chinese Potato Stir fry / Koorka Mezhukkupuratti

Chinese Potato / Koorka is a seasonal yet popular vegetable in kerala.  Unlike normal potato it is small and black in colour. It’s black colour is due to the soil sticking on it. The taste of this vegetable is earthy, distinct and they are extremely delicious on cooking. Koorka is a hairy tuber that looks similar to arbi but doesn’t have that slimy feel to it when chopped. It also doesn’t make your hands itch like elephant yam / chena does. Cleaning this vegetable can be tedious. Traditionally, the chinese potatoes are put into a clean, dry gunny bag/jute bag and then the gunny bag is hit against the floor many a times, till the skin begins to come off on its own and then knife is used to scrape off the remaining skin. It needs some time and patience for cleaning. I used to peel these chinese potatoes using a peeler. That way its a little easy and quick. It does blacken your fingers though. So wear gloves while peeling. even though it takes more time to scrap off the skin its taste is unique and delicious. Here in US I saw cleaned  koorka packet in a kerala store. I was very happy when I saw that packet, I bought it from there and prepared the stir fry with that chinese potato. Just try this recipe whenever u get chinese potato/ Koorka. I am sure that you will like its taste. This is a perfect combo with rice. Let me know how it turned out for you.


Ingredients

Koorka / Chinese Potato-250 gms
Garlic-4,crushed
Small onions/ Shallots-10
Turmeric powder-1/4 tsp
Red chili powder/crushed chilly flakes-2 tsp
Curry leaves-1 spring
Oil-3 tsp


Method Of Preparation

  • Peel the skin of chinese potatoes, wash them well with water and cut into small pieces
  • Cook with enough water,salt and turmeric powder until they are soft or pressure cook with little turmeric powder ans salt for 2 whistles
  • Heat oil in a pan. Add chopped small onions and crushed garlic in it and saute it well until it turns light brown in color
  • Add Red chili powder/crushed chilly flakes in it and saute it for few minutes
  • Add cooked koorka/ chinese potato in it and mix well. Saute it well and cook for 5 minutes on medium flame
  • Remove from fire and serve it as a side dish with rice
