Pumpkin Halwa Recipe | Pumpkin Halwa With Jaggery Recipe with Video Recipe. Pumpkin halwa is a delicious and traditional Indian dessert made from grated or pureed pumpkin cooked with ghee (clarified butter), milk, sugar, and flavored with aromatic spices. It is a popular sweet dish often prepared during festivals and special occasions in India.


 In this recipe I have made pumpkin halwa with jaggery. It’s Preparation is very simple. Firstly, a ripe and firm pumpkin is peeled, deseeded, and grated or blended into a smooth puree. The grated or pureed pumpkin is then cooked in a heavy-bottomed pan or a kadhai with a generous amount of ghee. Next, milk is added to the pan, and the mixture is simmered slowly until the pumpkin absorbs the milk and becomes tender. As the milk and pumpkin mixture thickens jaggery syrup is added to sweeten the halwa. As the pumpkin and jaggery mixture cooks, a variety of spices like cardamom, cinnamon, and nutmeg can be added to enhance the flavor. The halwa is further cooked, stirring continuously to prevent it from sticking to the pan and to ensure even cooking.

Towards the end of the cooking process, ghee (clarified butter) is added to enhance the halwa’s richness and provide a glossy finish. Once the halwa reaches a thick and pudding-like consistency, it is ready to be served.

Pumpkin halwa can be enjoyed warm or chilled, depending on personal preference. It is often served as a dessert during festive occasions or as a sweet treat after a meal. Try this recipe and let me know your feedback.

Ingredients

Pumpkin (Chopped)-2 Cup

Jaggery-1 Cup

Water-1/2 Cup

Milk-3/4 Cup

Ghee-2 tbs

Oil-2 tbs

Cashew Nuts

How To Make Pumpkin Halwa with Jaggery

  • Firstly, a ripe and firm pumpkin is peeled and deseeded. Then cut it into small pieces.
  • Steam it for 10 minutes or until pumpkin is cooked well.
  • Once pumpkin is cooked well, allow it to cool down completely. Transfer it into a mixer and grind it into a fine puree. Keep it aside.
  • Take a pan and add jaggery in it. Then add water in it. Heat it until jaggery melts completely. 
  • Then strain it and keep it aside.
  • Heat 2tbs ghee in a pan.
  • Add cashew nuts in it and sauté it until it turns golden brown in color. Then take it out
  • Next add oil in it and heat it.
  • Further add pumpkin puree in it and sauté it for 1 minute.
  • Then add milk in it. Stir it continously & Cook until milk is absorbed well.
  • Next add jaggery syrup in it. Mix it well and cook it until it thickens.
  • Add ghee in it and mix well.
  • Next add roasted cashew nuts in it  and mix it.
  • Finally cook it until the mixture starts to leave from side of the pan.
  • Pumpkin Halwa is now ready to serve.
