Pumpkin Egg Stir Fry Recipe | Easy Pumpkin Indian Recipes with Video Recipe. Today I would like to share with you the recipe of an easy and delicious stir fry that you can prepare with pumpkin and egg. Pumpkin is a versatile vegetable. You can prepare variety of dishes with pumpkin like curries, paratha, halwa, kheer, cake etc. As it has a sweet flavor, you can use pumpkin for making sweet dishes. You can make savory dishes also with pumpkin. Most parts of pumpkin are edible including it’s skin, seeds, leaves and flowers. Including pumpkin in your diet has many health benefits.  Pumpkins are rich in vitamins, minerals and antioxidants. Pumpkins are weight loss friendly as it is a low calorie veggie. I got a habit of trying variety recipes with the ingredients that are available in my kitchen, after starting this blog. This time, when I saw pumpkin in my fridge, I thought to prepare some variety dish with pumpkin that I have never tried before. My search for the variety recipe ended in this pumpkin egg stir fry recipe. I used to prepare only curries with pumpkin. This time thought to try a stir fry with pumpkin. It is very easy to prepare.  Those who don’t like to eat pumpkin stir fry as it is will also like this stir fry as I have added egg also in this recipe. Ingredients

Oil-2tbs

Pumpkin-500gm

Cumin Seeds-1/2 tsp

Ginger-1 tbs (Chopped)

Garlic Cloves-5 (Chopped)

Turmeric Powder-1/4 tsp

Coriander Powder-1 tsp

Redchilli Powder-1 tsp

Tamarind-half lemon sized

Jaggery-1 tsp

Eggs-3

Garam Masala-1/2 tsp

Salt 

Method Of Preparation

  • Remove the skin of the pumpkin and cut it into cubes.
  • Heat oil in a pan. Add cumin seeds in it. Let it splutter.
  • Add ginger and garlic cloves in it.
  • Sauté it until it turns golden brown in color.
  • Add pumpkin cubes in it.
  • Add salt to taste in it.
  • Mix it well & Sauté it for 2 minutes.
  • Add turmeric powder, coriander powder and redchilli powder in it.
  • Mix it well & Saute it for 2 minutes.
  • Add tamarind water in it. ( Soaked half lemon sized tamarind in 1/4 cup water).
  • Add jaggery in it 
  • .Mix it well.
  • Close it with a lid & Cook it for 5 minutes on low flame or until pumpkin pieces are cooked well.
  • Once pumpkin pieces are cooked well, move this mix to the sides of the pan & Create space at the center.
  • Add eggs in the center.
  • Mix it well and let the egg cook well.
  • Once eggs are cooked well mix everything well.
  • Add garam masala and salt to taste in it.
  • Mix it well & Cook it for 2 minutes.
  • Pumpkin Egg Stir Fry is now ready to serve
