We can try many recipes using Eggs.I tried many recipes for making egg curry but i liked this recipe among them.It is a delicious curry.It’s taste is different from other curries. One day I prepared this for breakfast as a side dish curry for Appam(Rice Pan cake)..It was Yummy..My husband liked it..You can also try this recipe..

Ingredients
Boiled Eggs-2
Onion-1
Potato-1
Tomato-1
Ginger garlic paste-1 tsp
Turmeric Powder-1/4 tsp
Red Chili Powder-1 tbs
Coriander Powder-1 tbs
Curry leaves-few
Oil-2 tbs
For Masala
Grated Coconut-1/2 cup
Coriander Powder-1 tbs
Red Chili Powder-1 tbs
Garam Masala-1 tbs
Method Of Preparation
- First cut the boiled eggs into two halves and coat each pieces with a paste made with turmeric powder, red chili powder and salt . Heat oil in a pan and roast the eggs
- For making masala first dry roast all the ingredients posted above under For Masala. Don’t add oil for roasting . First dry roast grated coconut, once it turned light brown in color add coriander powder, garam masala and redchili powder, roast them for few minutes till the raw smell goes. keep it aside and let it cool
- Once it is cooled grind it without adding water.
- Heat oil in a pan add onions and few curry leaves in it and saute it well.Once onion becomes transparent add ginger garlic paste in it and saute well.After that add turmeric powder,coriander powder and red chili powder in it and saute well for few minutes
- Add tomato in it and cook for few minutes
- Add chopped potato in it and cook by adding water in it until the potato is cooked well
- Once potato is cooked well add grounded masala in it and cook for 5 minutes..You can add water in it if u need more gravy
- Finally add the roasted egg in it and mix well
- Yummy egg curry is ready to serve hot
