Mughlai chicken handi preparation is very simple. Firstly, Marinated chicken pieces are cooked with fried onions and spice powders. Then we will add cashew nuts paste and beaten yogurt in this curry for getting creamy texture.,

Ingredients
Chicken-1 kg
Ginger Garlic Paste-1 1/2 tsp
Pepper Powder-1 tsp
Salt to taste
Turmeric Powder-1 tsp
Oil-2 tbs
Bay Leaf-1
Cardamom-4
Cloves-4
Cinnamon Stick-1 Small Piece
Onion-2 (Finely Chopped)
Coriander Powder-2 1/2 tsp
Redchilli Powder-1 tsp
Cumin Powder-1/2 tsp
Cashewnuts-10-15 (Soaked in water)
Curd-1/2 cup (Beaten)
Garam Masala-1 tsp
Green Chilies-2
Kasuri Methi-1 tsp
Coriander Leaves
How To Make Mughlai Chicken Handi
- Firstly clean and wash the chicken pieces. Drain the water and keep it aside.
- Next add 1tsp ginger garlic paste, 1 tsp pepper powder, 1/2 tsp turmeric and salt to taste into chicken pieces.
- Then mix it well. Rest it for 30 minutes.
- Heat 2 tbs oil in a kadai. Then add bay leaf, cardamom, cloves, cinnamon stick, finely chopped onion, 1/2 tsp ginger garlic paste and salt in it.
- Then, sauté it until onion turns golden brown in color.
- Add marinated chicken pieces in it and mix it.
- Then sauté it for 1 minute.
- Next add 1/2 tsp turmeric powder, 2 1/2 tsp coriander powder, 1 tsp red chilli powder, and 1/2 tsp cumin powder in it and mix it well.
- Then sauté it until raw smell of powders goes off.
- Grind cashew nuts into a paste and then beat the curd also
- Finally, add cashewnuts paste and beaten curd into the chicken gravy and mix it well
- Saute it for 2 minutes.
- Then add salt to taste in it and mix it well.
- Close it with a lid & cook it for 10 minutes or until chicken is cooked well.
- Once chicken is cooked well, add garam masala, green chilies and kasuri methi in it
- Mix it well and cook it for 1 minute.
- Finally garnish it with coriander leaves.
- Mughlai Chicken Handi is now ready to serve.
