Country Chicken Buna Masala Recipe | Chicken Buna Masala | Country Chicken Recipe with Video Recipe. Chicken buna masala is a popular Indian dish known for its rich and flavorful taste. It is a classic north indian dish which is prepared by stir frying and cooking chicken pieces in buna masala.
The word “Buna” means “Frying or Sautéing”. In this chicken buna masala preparation a basic onion tomato masala which is known as buna masala is prepared by frying spices, onions and tomatoes until it turns aromatic. Then the chicken pieces are added in this buna masala and the chicken pieces are fried along with this buna masala. Lastly chicken pieces are slow cooked until it become tender and succulent.
Usually chicken buna masala is a dry dish in which chicken pieces are cooked in its own juices without adding any extra water, but in this recipe I have added little water as I prepared this buna masala with country chicken. Country chicken pieces requires more cooking time than the normal chicken pieces hence I made this chicken buna masala in a pressure cooker. It will reduce the cooking time of country chicken pieces but if you are using normal chicken pieces then you can make this in a heavy bottomed pan or kadai by slowly cooking chicken pieces along with the buna masala until chicken pieces become tender and succulent..
It is a spicy and aromatic preparation that combines tender pieces of chicken with a well-spiced, thick, and semi-dry gravy. Chicken buna masala is typically served with Indian bread like naan or roti, or with steamed rice. Try this recipe and let me know your feedback.
Country Chicken Buna Masala Ingredients
Country Chicken-1 kg
Ginger garlic paste-1 tbs + 1 tsp
Turmeric Powder-1 tsp
Red chilli Powder-2 tsp
Coriander Powder-3 tsp
Salt-1 tsp
Oil-1/4 Cup
Cumin Seeds-1 tsp
Cinnamon-1 inch
Cardamom-4
Cloves-4
Black pepper-8
Bay leaf-2
Onion-3 medium (chopped)
Green chilies-2
Tomatoes-2 (chopped)
Curd/Yogurt-1/2 cup
Garam masala-1 tsp
Kasuri methi-1 tsp
Handful of coriander leaves
How To Make Country Chicken Buna Masala
- Firstly, in a large mixing bowl take 1 kg cleaned country chicken pieces.
- Then add ginger garlic paste, turmeric powder, redchilli powder, and salt in it.
- Mix everything well to marinate.
- Cover it and rest it for at least 30 minutes.
- Further Add 1/4 cup oil in a pressure cooker and heat it.
- Then add cumin seeds, cinnamon, cardamom, cloves, black pepper and bay leaf. Fry them for 30 to 40 seconds.
- Next add chopped onion and little salt in it. Saute it until onion turns golden brown in color.
- Then add ginger garlic paste and green chilies in it.
- Saute it until raw smell of ginger garlic paste disappears.
- Then add turmeric powder, coriander powder and redchilli powder in it.
- Saute it until raw smell of powders goes off.
- Further add tomatoes and sauté it until tomatoes are cooked well.
- Add the marinated chicken pieces in it and then add curd/yogurt in it.
- Mix it well and cook it for 5 minutes.
- Add 1/2 cup water in it.
- Mix it and add salt if needed.
- Then close the lid of the pressure cooker and cook it for 6 whistles or until chicken pieces are cooked well.
- Finally add garam masala, kasuri methi and handful of coriander leaves in it. Mix it and cook it for 1 minute.
- Country chicken buna masala is now ready to serve.
