Chicken Kosha Recipe | Bengali Style Chicken Curry Recipe | Kosha Mangsho Chicken Recipe with Video Recipe. Chicken Kosha, also known as Kosha Mangsho, is a popular and flavorful Indian dish hailing from the state of West Bengal. It is a slow-cooked, dry-style preparation of chicken. 


Chicken Kosha is prepared by marinating pieces of chicken in a mixture of yogurt, ginger garlic paste, turmeric, red chili powder and mustard oil. The marination helps to tenderize the meat and infuse it with the vibrant flavors of the spices. After marinating, the chicken is slow-cooked in a pot with a mixture of caramelized onions, ginger, garlic, and tomatoes.

This slow-cooking process allows the flavors to blend together. The use of mustard oil, a staple in Bengali cuisine, adds a distinct flavor to the dish. Additionally, the dish often incorporates whole spices like cinnamon, cardamom, and bay leaves, which contribute to its aromatic complexity. Chicken Kosha Ingredients

Chicken-1 kg

Ginger garlic paste-2 tsp

Turmeric powder-1 tsp

Kashmiri redchilli powder-4 tsp

Coriander powder-1 tsp

Cumin powder-1 tsp

Salt-1 1/2 tsp

Mustard oil-2 tsp + 3 tbs

Curd-3 tsp

Dried Redchilli-4 nos

Bay leaf-1 no

Cinnamon-1 inch stick

Cardamom-4

Onion-2 (Thinly sliced)

Sugar-1/2 tsp

Tomato Puree- 2 tomatoes

Green Chilies-2

Garam Masala-1 tsp

Ghee-1 tbs

Coriander Leaves

How To Make Chicken Kosha

  • Firstly, wash the chicken pieces and strain the water completely from the chicken pieces.
  • Then marinate the chicken pieces with turmeric powder, ginger garlic paste, Kashmiri red chili powder, salt, curd and mustard oil. Let it marinate for at least 30 minutes.
  • Next In a deep frying pan/kadai heat 3tbs mustard oil. Then add dried red chilli, bayleaf, cinnamon and cardamom. Saute it until it turns aromatic.
  • Further add onion, ginger garlic paste, salt and sugar in it. Saute it until onion turns golden brown in color.
  • Next in a bowl add turmeric powder, Kashmiri chilli powder, coriander powder, cumin powder and 2tbs water. Mix it to form a paste.
  • Then add that paste and mix it well. Saute it for 2 minutes.
  • Add the tomato puree into it and sauté it for 2 minutes.
  • Further add the marinated chicken pieces in it and mix it well.
  • Then add 1/2 cup water and salt to taste in it and mix it well. Saute to for 3 minutes.
  • Cover it and cook it for 10 minutes in low flame. 
  • Finally add green chilies, garam masala, ghee and coriander leaves in it. Mix it well and cook it for 1 minute.
  • Chicken Kosha is now ready to serve
