The preparation of this suji cake is very simple. Just you need to blend all the necessary ingredients in the blender. Then the cake batter will be ready. I have added tutti frutti in the cake batter hence the name of this cake is suji fruit cake. If you don’t want to add tutti frutti in this cake batter you can omit it and make it as a plain suji cake. You can serve it as a dessert snack with your choice of beverage. Eggless Suji Cake Ingredients

Suji/Semolina-1 Cup

Powdered Jaggery-1/2 Cup

Milk-1 Cup

Refined Oil-1/4 Cup

Vanilla Essence-1 tsp

Baking Powder-1 tsp

Baking Soda-1/2 tsp

Tutti Frutti-2 tbs

Cherries(Chopped)-1 tbs

How To Make Eggless Suji Cake

  • Firstly, in a blender add suji/semolina, powdered jaggery, milk, refined oil and vanilla essence. Then grind it to a smooth batter.
  • Further transfer it into a bowl and rest it for 10 minutes.
  • Then add baking powder, baking soda in it and mix well.
  • Further add tutti frutti and cherries in it and mix it gently.
  • Eggless Suji Cake batter is now ready.
  • Next grease a cake pan with oil. Place a butter paper inside this and grease it with oil. Pour the cake batter in the cake pan. 
  • Decorate the top with cashew nuts and then tap it for removing air bubbles.
  • Finally, preheat oven at 180 C for 10 minutes.
  • Place the cake pan inside the preheated oven.
  • Then bake it at 180 C for 40 minutes.
  • After 40 minutes, insert a tooth pick in the middle, if it came out clean then cake will be ready. if not then bake it until done
  • Take out the cake from the cake pan and allow it to cool down completely.
  • Once cooled down completely, cut it and serve it.
