U might have tried to make many snacks items and payasam/kheer with ripe jackfruit. I have already shared the recipes of the items that I tried in my blog. U can click these links for recipes of jackfruit unniappam and jackfruit kheer. Today I am coming here with the recipe of a cake made with ripe jackfruit. Here I am using the jackfruit pulp/ chakkavaratti for making this cake. So, if you have jackfruit pulp/chakkavaratti in your home, then just try to make this cake. Don’t worry if you have only ripe jackfruit in your home, but you don’t have jackfruit pulp in your home, U can make this cake with just jackfruit also. Just try to make the puree of the jackfruit and add that to the cake. I couldn’t make the video of making jackfruit pulp, but I explained below how to make jackfruit pulp with jackfruit and jaggery. I tried to make this cake in pressure cooker, so don’t worry if you don’t have oven in your home, u just need pressure cooker for preparing this cake.This cake’s taste will be similar to that of the banana cake. Ingredients

Jackfruit Pulp
Jackfruit puree-2 cup(10 big pieces of jackfruit)
Jaggery-2 cup
Ghee-3 tbs

Jackfruit Cake
All purpose flour(maida)-1 cup
Baking soda-1/2tsp
Baking powder-1tsp
Salt-1/4 tsp
Granulated sugar-1/2 cup
Egg-2
Vegetable oil-1/2 cup(any flavorless oil)
Vanilla essence-1 tsp
Jackfruit Pulp-1/2 cup
Cashew nuts
Raisins



Method Of Preparation

Jackfruit Pulp

  • Take out the seed from jackfruit pieces and chop them into small pieces Girnd it into a smooth paste without adding water. Now the jackfruit puree is ready 
  • Take jaggery in a pan and add 1/4 cup water into it then heat it, stir well till the jaggery dissolves completely in water. Strain this jaggery juice to get rid of sand or dust particles 
  • Heat a pan and add the strained jackfruit juice into it and bring it into a boil, then add the jackfruit puree into it and mix well 
  • Let it cook and add ghee at intervals. keep stirring till the pulp start to separate from the pan and come together as rolling ball, this is the right stage, switch off the flame. Chakka varatti is now ready to serve.


Jackfruit Cake

  • Take eggs in a bowl and beat it well 
  • Add sugar little by little and beat till sugar dissolves
  • Add vanilla essence and oil into it and beat it well
  • Add jackfruit pulp into it and mix well
  • Take maida (All purpose flour), baking powder, baking soda and salt in a silver and sift it 2 times. We need to sift this mix for making the cake soft
  • Now Mix everything well with a spatula using cut and fold mixing technique. no need to beat it now. Cake may become hard if we beat it again, so just mix everything well using a spatula
  • Grease a bowl with oil
  • Pour the cake batter into it
  • Decorate the top of the cake with cashew nuts and raisins
  • Add 1 cup salt into a pressure cooker, Place a vessel on top of it, remove the weight of the cooker and close it
  • Preheat it on medium flame for 5 minutes
  • After 5 minutes, open the lid and reduce the flame to low
  • Tap the cake bowl for removing the air bubbles
  • Carefully place the bowl into the pressure cooker
  • Cover and bake it on medium flame for 5 minutes, then bake for 35-40 minutes on low flame
  • After 40 minutes, open the lid and insert toothpick in the middle, if it came out clean, then the cake is done. if it is not done then bake it for 10-15 minutes more
  • After 5 minutes take it out from the pressure cooker and allow it to cool down
  • Once it is cooled down completely, then use a knife to separate the cake from the side of the bowl
  • Take out the cake from the bowl and place it on a plate to serve
