Pineapple is incorporated into this basic cake mix. It gives a distinct tropical flavor for this cake. In this recipe I have made a paste of pineapple and added that to the cake mix. It is a healthy cake as we are using wheat flour instead of all purpose flour/maida and jaggery instead of sugar in this recipe. People who are health conscious can have this cake without thinking more about their health. It is very easy to prepare. It is a soft moist cake.

Pineapple Cake Ingredients

Pineapple (Chopped)-1/2 Cup

Eggs-2

Powdered Jaggery-3/4 Cup

Oil-1/2 Cup (Flavorless Oil)

All Purpose Flour/Maida- 1 Cup

Baking Powder-1 tsp

Baking Soda-1/2 tsp

Salt-1/4 tsp

Milk-1/4 Cup

How To Make Pineapple Cake

  • Firstly, chop pineapple into small pieces. Then transfer it into a mixer and grind it to a fine paste and keep it aside.
  • Further add egg, powdered jaggery and oil into it. Beat it until jaggery dissolves completely and gets a creamy texture.
  • Then transfer it into a bowl. Place a sieve over it. Add all purpose flour, baking powder, baking soda and salt in it. Mix it well and sift it.
  • Mix it gently using cut and fold method.
  • Then add grounded pineapple paste in it.
  • Add milk in it and mix it gently.
  • Cake Batter is now ready.
  • Pour the cake batter into a loaf pan lined with butter paper.
  • Tap it for removing air bubbles.
  • Further preheat oven at 180 C for 10 minutes.
  • Then bake it at 180 C for 30 minutes.
  • Insert a toothpick in the middle of the cake.
  • If it came out clean then the cake is ready, if not bake it until done.
  • Take out the cake tin from the oven. Remove the cake from the cake tin.
  • Allow it to cool down completely. Once cooled down completely, cut it and serve it.
