Banana Cake with Whipped Cream Frosting Recipe

Only 2 days difference are there between my birthday date and my husband’s birthday date, so most of the times we will celebrate it together on one day. It was on May. For this time I made  Banana Cake with Whipped Cream Frosting for our birthday. This cake photo was there in my blog recipe folder but today only I got time to post the recipe of this cake. All of our friends liked the taste of this cake. Flavor of banana makes the cake more tasty. I am a beginner in cake decoration. so i think the decoration of this cake is not good..I am still learning the cake decoration. Hope I can post recipe of cake with good decoration later.Today we can learn how to prepare banana cake with whipped cream frosting. Try it and let me know your comments



Ingredients
All purpose flour(maida)-2 cup Baking soda-1 tsp
Baking powder-1 1/2 tsp
Salt-1/2 tsp
Cinnamon powder-1 1/2 tsp
Granulated sugar-1 1/2 cup
Egg-4
Vegetable oil-1 cup(any flavorless oil)
Vanilla extract-2 tsp
Mashed ripe bananas-1/2 cup
Walnuts chopped-100 grams

For Frosting
Heavy whipping cream- 1 cup
Granulated white sugar- 1-2 tbs
Vanilla extract-1/2 tsp

Method Of Preparation

  • Preheat the oven at 180 degree C (350 F)for 15 minutes
  • Grease the baking tray with butter and dust flour or spray non-stick cooking spray along the sides and middle of the baking tray
  • Mix all the dry ingredients-Maida,Baking soda,Baking powder,salt and cinnamon powder in a bowl
  • Beat eggs well(I used whisk for beating)
  • Add sugar little by little and beat till sugar dissolves
  • Add vanilla essence and mix well
  • Add 1 cup oil and beat it well
  • Add flour little by little in to this mixture and mix well
  • Add mashed ripe bananas and chopped walnuts in it and mix well
  • Bake for 30 minutes at 180 degree C (350 F).(Insert a toothpick into the center of the cake.if it came out clean,then the cake is ready)
  • Remove from oven and place directly into the freezer for 45 minutes.This will make the cake very moist
  • For Frosting place your mixing bowl and whisk in freezer for about 15-30 minutes
  • Using the chilled whisk beat the whipping cream until frothy in the chilled bowl
  • Add the sugar and vanilla gradually while beating
  • Beat until the frosting is smooth
  • Spread it on cooled cake and decorate the cake as you like by adding food coloring in the frosting cream
