Tapioca also known as Yuca, is a starchy root vegetable that is a staple food in many parts of the world, particularly in South America, Africa, and Asia. It is a long, tapered root with a rough, brown exterior and a white, fibrous interior. Tapioca is an important source of carbohydrates and is often used as a substitute for potatoes or rice. It can be boiled, fried, baked, or mashed and is used in a variety of dishes. Tapioca is also rich in nutrients such as vitamin C, calcium, and potassium so including it in your diet is good for your health.
Today I am sharing here with you the recipe of a stir fry that is made with tapioca. Here I have made tapioca stir fry in kerala style it is known as kappa puzhukku.
Kappa Puzhukku is a traditional Kerala dish made from boiled and mashed tapioca (known as kappa in Malayalam) mixed with grated coconut and spices. In this recipe I have made tapioca stir fry in Kerala style, try this recipe and let me know your feedback.
Ingredients
Tapioca/Yuca-3 small
Turmeric Powder-1/2 tsp
Salt to taste
Grated Coconut-1 Cup
Green Chilli-2
Cumin Seeds-1/2 tsp
Garlic Cloves-3
Oil-2 tbs
Mustard Seeds-1/2 tsp
Small Onions/Shallots-10 (Chopped)
Dry Red chilies-2
Curry Leaves
Water
How To Make Tapioca Stir Fry
- Take 3 small tapiocas. Then cut both ends of tapiocas.
- Next cut into half and peel off the skin completely.
- Further remove the center hard fiber and cut it into small chunks.
- Then wash & rinse thoroughly 2 times.
- Next add the washed tapioca into a heavy bottomed pan then add turmeric powder and salt in it.
- Add enough water in it and mix it well.
- Next close it with a lid and cook it until tapioca becomes soft.
- Then strain the water and keep it aside.
- Further in a mixer add grated coconut, green chilies, cumin seeds and garlic cloves in it.
- Then crush everything well and keep it aside
- Next Heat 2tbs oil in a pan then add mustard seeds, small onions, dry red chilies and curry leaves in it.
- Then sauté it until onion turns golden brown in color.
- Next add crushed coconut mixture in it and sauté it for 2 minutes.
- Add the cooked tapioca, salt to taste and 1/2 cup water in it
- Then mix it well.
- Finally close it with a lid & cook it for 5 minutes in low flame. Mash it well.
- Tapioca stir fry is now ready to serve.
