Capsicum Coconut Stir fry

Today I am sharing with you a recipe with capsicum and coconut which you can prepare as a side dish. This is very easy to prepare and very tasty also. You may think capsicum as such doesn’t have lot of flavor, so mostly you will mix it with other vegetables in many dishes, but here I used capsicum alone for preparing this stir fry. Capsicum(Bell Pepper),chopped-2
Grated Coconut-1/2 cup
Green chili-2
Turmeric powder-1/4 tsp
Small onions,chopped-6
Mustard seeds-1 tsp
Curry leaves-few
Red chili-2

Method Of Preparation

  • Grind coconut by adding green chili,turmeric powder and salt in it without adding water in it
  • Heat oil in a pan, splutter mustard seeds in it then add redchili,chopped onions and curry leaves in it and stir fry for few minutes
  • Finally add the chopped capsicum and salt in it and mix well. Close the lid and cook it for 10 minutes on medium flame 
  • Capsicum coconut stir fry is ready to serve hot as a side dish with rice or chapati
