Today I am sharing here with you the recipe of a pancake made with puffed rice, for a quick breakfast or snack. The best part about this pancake is that it can be prepared in no time at all. It’s also very healthy, nutritious and tasty. Puffed rice also known as murmura or pori. Puffed rice is a type of processed rice that has been expanded into puffed grains. It is produced by heating the grain under high pressure so that it explodes and becomes porous, with a crispy texture when cooled. You can make many recipes with puffed rice. Today I am posting here a variety recipe with puffed rice, that is puffed rice pancake. This pancake is a spicy pancake, you can have it as it is, no need to prepare any side dish for this pancake. You can prepare this pancake in few minutes, with very less ingredients that are always available in your kitchen. Ingredients
 
Puffed Rice/ Murmura/Pori- 1 cup
Besan Flour-1/2 cup
Curd-2 tbs
Ginger (Finely chopped)- 1 tsp
Green chilli (Chopped)-1
Curry Leaves (Chopped)
Onion (Finely chopped)-1
Tomato-1 (Chopped)-1
Redchilli Powder-1/4 tsp
Pepper Powder-1/4 tsp
Salt to taste
 
Method Of Preparation
 
  • Grind Puffed rice into a coarse powder in a mixer
  • Transfer the puffed rice powder into a bowl.
  • Add besan flour, curd, finely chopped ginger, green chill, curry leaves, onion, tomato, redchilli powder, pepper powder and salt to taste in it.
  • Add water as required and make a dosa batter like consistency batter.
  • Heat a non stick pan.
  • Pour a ladleful of batter on the pan. (Don’t spread it).
  • Close it with a lid & Let it cook well.
  • Once it’s cooked well, sprinkle ghee/oil on top.
  • Flip it & Let the other side cook well.
  • Once both sides cooked well, take out the pancake from the pan.
  • Puffed Rice Pancake is now ready to serve
