U might have tried many dishes with tapioca, but I think this recipe kozhikkal / vegetable chicken leg fry will be new to many of you. It is nothing but tapioca stick fry. This snack is so popular in Thalassery that is in northkerala. Meaning of kozhikkal in Malayalam is “chicken leg”. This snack looks like chicken leg, so it’s name is kozhikkal. It’s taste will be similar to that of French fries. Just try this recipe, if you have tapioca at your home. I am sure that you will love the taste of this snack. Tapioca-1, medium size
Green chillies-2
Ginger- small piece
Garlic-3 to 4 cloves
Turmeric powder-1/2 tsp
Redchilli powder-2 tsp
Garam masala-1/2 tsp
Gram flour/ kadala mavu-4 tbs
Rice flour-2 tbs
Sooji/ Rava-1 tbs
Salt-1 tsp
Method Of Preparation
- Peel the outer skin of tapioca. Wash it well
- Cut it into two halves
- Heat water in a pot. Once it started to boil, put the tapioca pieces into it
- Cook it just for 2 minutes. After 2 minutes, takeout the tapioca pieces from water and allow it to cool down completely
- Once it is cooled down, slice them like thick matchsticks
- Take a blender, add greenchillies, ginger and garlic into it and make a paste of it
- Take a bowl and add that paste into it. Then add turmeric powder, redchilli powder, garam masala and salt into it.
- Add water little by little into it and make a thick batter
- Add tapioca sticks into the batter and coat it well with the batter. Tapioca stick should stick together by batter. If the tapioca sticks are not sticking together, u can add more gram flour and water
- Heat oil in a pan. Take a handful of tapioca sticks and drop it gently into hot oil.
- Deep fry it on medium flame till it turns golden brown and crispy
- Kozhikkal/ Tapioca Stick fry is now ready to serve hot with tea
