Stuffed Plantain / Pazham nirachathu is a tasty snack from malabar(North kerala). It is normally served as a tea time snack and it is very popular during Eid/Iftar parties. Stuffing is prepared by using coconut,sugar mixture. It is a very tasty snack and a healthy snack for kids. Try this recipe and let me know how it turned out for you
Ingredients
Ripe Plantain-2 nos
Grated Coconut-1/4 cup
Sugar-50 gms
Cardamon-3-5
Cashew nuts-4-5
Maida/All purpose flour-1/2 cup
Water
Ghee-1 tbs
Oil for frying
Method Of Preparation
Heat ghee in a pan.Add cashew nuts in it and fry for few minutes then add grated coconut,sugar and cardamon in it and saute well.
Switch off the flame when nice aroma comes.
In a bowl.take maida/all purpose flour and add a little bit sugar and salt in it and mix well.Add enough amount of water to it and make a thick batter.
Make a slit in the center of the plantain.Remove the center portion(balack seeds).Fill the slit with fried coconut-sugar mixture as shown in the below picture.
Seal the slit by using batter we already prepared.
Heat oil in a pan and shallow fry the stuffed plantain till they become golden brown in color.
Yummy Stuffed Plantain / Pazham nirachathu is ready to serve hot with tea.
