Semiya payasam/Vermicelli kheer is a one of the easiest dessert that you can prepare for any special occassions.This payasam/kheer is made by caramelizing sugar. Caramel flavor gives a unique taste for this payasam/kheer.While caramelizing sugar, you have to be very careful not to burn it. If it got burned, it is better to discard it and start with fresh sugar again, because burnt caramel will give bitter taste for payasam/kheer. Ingredients
Vermicelli/Semiya-1 cup(Unroasted)
Sugar-1 cup
Sabudana-1/4 cup
Milk-4 cup
Ghee
Cashew nuts
Raisins
Method Of Preparation
- In a bowl soak sabudana for 5to6 hours by adding just enough water to cover them
- Heat ghee in a pan
- Roast vermicelli till slightly golden color on medium flame
- After frying transfer it into a plate and keep it aside
- Heat sugar in a heavy bottomed pan, heat it on low flame, keep stirring. Sugar will start to melt. Once sugar started to change golden brown in color, add 3/4 cup water
- Sugar syrup will solidify immediately, increase the flame to medium, keep stirring till sugar dissolves immediately
- Pour milk into it, then add soaked sabudana into it, bring milk into a boil and cook sabudana
- Once sabudana is 3/4th cooked, add roasted vermicelli into it
- Mix everything well and cook vermicelli
- Heat ghee in a pan and roast cashew nuts and raisins till it turns golden color, add that to the payasam and mix everything well
- Caramel Semiha Payasam / Caramel vermicelli kheer is now ready to serve
