Kheer/Payasam is the one of the favorites for all people in special occassions,whether it is South India or North India. If you are looking for a variety in kheer/Payasam, then you can try this Yellow cucumber/Dosakaya/Vellarikka Payasam/Kheer. Especially for keralites,you can try this vellarikka payasam with the left over vellarikka which we kept for vishu kani. It looks like Ada pradhaman, which we will prepare for kerala sadhya. Ingredients
Cucumber/Vellarikka/Dosakaya pieces-1 cup
Sabudhana/chowwary-1/4 cup
Jaggery-5-6 blocks
Thin Coconut milk-1 cup
Thick Coconut milk-1/2 cup
Cardamon powder-1/4 tsp
Ghee-1 tbs
Cashew nuts-8-10
Raisins-10
Method Of Preparation
- Soak sabudhana in water for about an half an hour
- Chop the cucumber into thin pieces (like Ada pieces)
- Take the soaked sabudhana in heavy bottomed pan. Fill it with sufficient water and cook it
- When it is half cooked add the cucumber pieces and continue to cook till both the sabudhana and cucumber pieces become soft
- Add thin coconut milk in it and melt jaggery in it
- Boil it until the mixture thickens. Stir it well
- Then finally add the thick coconut milk in it and stir well.
- Add the cardamon powder in it and mix well. Switch off the flame
- Heat ghee in a pan then add cashew nuts and raisins in it and fry until the cashew nuts turns golden brown in color
- Pour it over the payasam
- Delicious Yellow cucumber/Dosakaya/Vellarikka Payasam/Kheer is ready to serve hot
