This mutton curry is very easy to prepare as well as tastes delicious. Korma is one of the popular mughlai dishes. Korma is a gravy made by slowly cooking meat or vegetable with ghee, fried onions, spices, yogurt and nut paste. Preparation of korma in south India is different from north India. North Indian korma is made by fried onions and yogurt, while the South Indian korma is made with coconut milk. Mutton korma that I am sharing here now is made in North Indian style. In this mutton korma, mutton is slowly cooked with ghee, fried onions, spices, yogurt and nut paste. Main flavor of this curry is coming from the crushed fried onions and the yogurt that we are using for making this mutton curry. You should cook mutton slowly in this recipe for getting the actual taste of this curry, because slowly cooking of mutton helps to release all of the juices from the bones and that will make the curry delicious. But In this recipe for avoiding long time cooking of mutton I cooked mutton in pressure cooker after cooking it for few minutes. Ingredients
Mutton-1/2 kg
Cashew nuts-8 nos
Curd-1 cup
Turmeric Powder-1/2 tsp
Red chilli Powder-1 tbs
Coriander Powder-2 tbs
Cumin Powder-1 tsp
Ginger garlic paste-3 tbs
Salt to taste
Lemon Juice-1 tsp
Ghee-5 tbs
Onion-2, thinly sliced
Cinnamon Stick-1
Cardamom-4
Cloves-4
Black Cardamom-1
Mace-1
Green Chilli-1 (Chopped)
Garam Masala-2 tsp
Method Of Preparation
- Soak cashew nuts in hot water for 10 minutes.
- Grind the soaked cashew nuts in a mixer into a paste.
- Take a bowl. Add mutton pieces, curd, turmeric powder, red chilli powder, coriander powder, cumin powder, ginger garlic paste, lemon juice and salt to taste in it. Mix it well.
- Heat 2tbs ghee in a pan. Add thinly sliced onions in it. Sauté it until onion turns golden brown in color.
- Allow it to cool down completely. Once it’s cooled down completely crush it in a mixer.
- Heat 3tbs ghee in a pressure cooker. Add cinnamon stick, cardamom, cloves, black cardamom, mace, green chilli and ginger garlic paste in it.
- Saute it until it turns golden brown in color.
- Add the marinated mutton pieces in it.
- Add crushed fried onions, cashew nut paste, garam masala and salt to taste in it.
- Mix it well & Cook it for 8-10 minutes.
- Add 3 cup water and garam masala in it.
- Mix it well.
- Close the lid of the pressure cooker and cook it for 4 whistles.
- After 4 whistle switch off the flame and allow the pressure of the cooker to release
- Mutton Shahi korma is now ready to serve
