Today I am sharing here with you the recipe of an instant mango pickle, which has a sweet, sour and spicy taste. It is very easy to prepare. Traditionally sweet mango pickle making requires 10-14 days, but this recipe of sweet mango pickle is an instant one and requires very less less time. In the traditional method of making this sweet mango pickle, we will combine the chopped mango pieces with spices and jaggery and let it sit in sunlight for 10-14 days until the sugar melts, but in this method instead of making it to sit for days in the sunlight, we are cooking it on the stove top and it will be ready in 10 minutes. Ingredients
Mangoes-2 (chopped)
Oil-2 tbs
Mustard Seeds-1/2 tbs
Fenugreek Seeds-1/4 tbs
Ginger- Small piece
Garlic Cloves-5 (chopped)
Green Chilli- 1 (chopped)
Curry Leaves
Redchilli Powder-1 1/2 tbs
Turmeric Powder-1/2 tbs
Salt to taste
Water-1 1/2 cup
Jaggery powder-3 tbs
Fenugreek Powder-1/2 tsp
Asafoetida Powder-a pinch
Method Of Preparation
- Heat oil in a pan.
- Add mustard seeds and fenugreek seeds in it.
- Let it splutter.
- Add ginger and garlic cloves, green chili and curry leaves in it.
- Sauté it until it turns light golden brown in color.
- Add chopped mango pieces in it.
- Add turmeric powder, red chili powder and salt to taste in it.
- Mix it well.
- Saute it until raw smell of powders goes off.
- Add water in it and mix it.
- Let mango cook well.
- Once mango cooked well, add jaggery powder in it.
- Mix it well and let the jaggery melt completely.
- Make sure that the mango pieces are coated well with the jaggery syrup.
- Add fenugreek powder and asafoetida powder in it and mix it.
- Sweet mango pickle is now ready.
- Allow it to cool down completely.
- Once it is cooled down completely, store it in a dry glass jar or container.
