Payasam/kheer will be the favorite item for all in the onam sadhya. I am sharing here with you the recipe of a variety payasam/kheer which is made with vermicelli/semiya. You all might have tried the semiya payasam with sugar, but did you ever try to make semiya payasam with jaggery?, Yes you can make semiya payasam with jaggery also. It will be a more healthier version of semiya payasam as we are using jaggery instead of sugar in this recipe. It is healthy as well as tastes delicious. Jaggery-250 gm
Water-1 cup
Ghee-1 tbs
Cashewnuts-10
Raisins-10
Milk-4 cup
Cardamom Powder-1/4 tsp
Method Of Preparation
- Take jaggery in a heavy bottomed pan. Add water in it.
- Heat it and let the jaggery dissolve completely.
- Once jaggery dissolved completely, switch off the flame.
- Strain the jaggery syrup and keep it aside.
- Heat ghee in a pan.
- Add cashewnuts in it.
- Roast it until cashewnuts turns golden brown in color.
- Take it out from the pan.
- Add raisins in it.
- Roast raisins until they puff up.
- Take it out from the pan.
- Add vermicelli/semiya into the same pan.
- Roast vermicelli/semiya until it turns light brown in color.
- Add milk in a heavy bottomed pan.
- Let it boil.
- Once it started to boil, add the roasted vermicelli in it.
- Keep stirring.
- Cook it till the vermicelli is fully soft cooked.
- Reduce the flame to low and add the jaggery syrup in it.
- Add cardamom powder in it.
- Mix it well.
- Keep stirring & cook till it thickens.
- Finally add roasted cashewnuts and raisins in it and mix well.
- Semiya Sharkara Payasam is now ready to serve
