Sarkara Varatti Recipe | Sarkara Upperi Recipe | Banana Chips Coated With Jaggery with Video Recipe. Onam is coming and for the kerala sadhya sarkara varatti/sarkara upperi is must. We usually buy that from stores as we don’t know how to make it. This time I thought to make that at home, so I started to search for the recipe in internet, Once I saw the recipe I could understand that it’s very easy to make. You can see many recipes in internet, I am also sharing here the recipe which I tried in my own way, it came out well for me so I thought to share it with you, so that you can try this recipe for this year’s onam sadhya. You have to use raw plantain/ raw nendra banana for this recipe. It’s preparation is very simple. First you need to cut the banana into 1/2 inch thick pieces. I have explained how to peel and cut banana in detail in the video recipe. Please check the video attached at the end of this post for details. After cutting the banana into 1/2 inch thick pieces, we need to deep fry the banana pieces until it turns golden brown and crispy. You need to make sure that the banana pieces are crispy, otherwise you won’t get perfect sarkara varatti/sarkara upperi. It’s one of the main thing that you need to consider for getting perfect sarkara varatti. Next we need to make jaggery syrup. We need to add the fried banana pieces in jaggery syrup once the jaggery syrup reached one string consistency. That is the second thing that you need to consider for getting perfect sarkara varatti. I have explained in detail in the video, how you can check jaggery syrup has reached one string consistency. You need to add banana pieces in the jaggery syrup that has reached one string consistency. Mix it well and make sure that the banana pieces are well coated with the jaggery syrup. if the jaggery syrup is not in one string consistency, then the banana pieces won’t get well coated with the jaggery syrup. Make a powder mix of dry ginger, cumin seeds, cardamom and sugar and add that powder mix into the jaggery syrup coated banana pieces. Mix it well. Finally add rice flour and powdered sugar into it and mix it continuously until you can see each banana pieces comes out separately. Ingredients

Raw Plantain/ Raw Nendra Banana-3 nos
Dry ginger-1 big pieces
Cumin Seeds-1 tsp
Cardamom-1
Sugar-2tbs
Jaggery-250 gm
Water-1/2 cup
Rice flour-1 tbs
Oil for Deep frying

Method Of Preparation

  • Take raw plantain/ raw nendra banana. Apply oil on your hand and knife
  • Cut both ends of the banana. Make slit on the banana
  • Peel the skin of the banana
  • Cut each of them lengthwise into halves
  • Again cut each halves into 1/2 inch thick pieces
  • Heat oil in a pan and add the banana pieces into it
  • Deep fry the banana pieces until it turns golden brown in color and crispy. (Make sure that the pieces are crispy).
  • Transfer it into a tissue paper for removing excess oil
  • Allow it to cool down completely
  • Take a pan. Add dry ginger, cumin seeds and cardamom into it. Saute it in low flame for 1 minute
  • Once it’s cooled down completely transfer it into a mixer
  • Add 1tbs sugar into it. Make a fine powder of it and transfer it into a bowl
  • Make a fine powder of 1tbs sugar and keep it aside
  • Take a pan. Add jaggery into it. Add 1/2 cup water into it.
  • Heat it and let the jaggery dissolve completely
  • Once the jaggery dissolved completely. Switch off the flame
  • Take a thick bottomed kadai. Strain the jaggery syrup into that kadai.
  • Heat it on medium flame until the syrup reaches one string consistency
  • U can check the one string consistency of the jaggery syrup by dropping few drops of the syrup into a bowl of water. If you can form a hard ball, then the jaggery syrup will be reached the one string consistency
  • Reduce the flame to low and add the fried banana pieces into it
  • Mix it well and make sure that the banana pieces are well coated with the jaggery syrup
  • Add the powdered mix of dry ginger, cumin seeds, cardamom and sugar into it and mix well
  • Switch off the flame 
  • Add 1tbs rice flour and 1tbs powdered sugar into it 
  • Mix it continuously until you can see each banana pieces comes out separately
  • Sarkara Varatti/ Sarkara Upperi is now ready to serve
