I saw many recipes of Carrot kheer in internet, but in most of the recipes they mentioned to grate the carrot for preparing this kheer. It is a difficult process for me to grate the carrot. I think it will be like that for you all.so I prepared another version of carrot kheer, in this you no need to grate carrot.Both adults and kids will love this kheer. Ingredients
Carrot-4,medium sized
Milk-2 cups
Sugar-4 tsp
Ghee-1 tsp
Cashew-2 tsp broken
Saffron-2 strands
Cardamon powder-1/2 tsp
Method Of Preparation
- Heat ghee in a pan, add the cashews and fry them to golden brown and keep aside. Pressure cook carrots for 3 whistles and grind it to a smooth paste. Keep aside
- In the same pan, Add the carrot paste. Saute the carrot paste until the raw smell completely leaves.Then add milk and mix well. Stir it well
- Add sugar and cook for 5-7 minutes until the kheer becomes thick. Keep stirring. Crush saffron and add it
- Then add cardamon powder and ghee roasted cashews and stir well. Keep stirring till it becomes to a thick kheer consistency. Switch off the flame and serve hot or cold as per your choice
