Asparagus / shatavari is a vegetable with lots of nutritional and medicinal properties.When I came to know the health benefits of Asparagus I started to search in internet for the recipes with asparagus and I found asparagus thoran recipe and decided to prepare that recipe. It was yummy.You can also try this recipe and can serve it as a side dish with rice. Here is the recipe

Ingredients
Asparagus-1/2 kg
Grated Coconut-1/2 cup
Green chilies-2
Turmeric Powder-1/4 tsp
Mustard seeds
Curry leaves
Salt -To Taste
Oil-As required
Method Of Preparation
- Discard the lower hard ends of asparagus.Clean and cut the asparagus to thin rounds
- Crush the grated coconut,green chilies and turmeric powder in a mixer
- Heat oil in a pan add mustard seeds and curry leaves in it
- when mustard seeds start to splutter add the grounded coconut mixture in it and saute well for a minute
- Add the chopped asparagus in it and mix well
- Cover the lid and cook it for 10 minutes.Stir occasionally
- Asparagus thoran is ready to serve as a side dish with rice
