In Bangalore “Shivaji Military Hotel”  is famous for this Donne biryani. This special type of biryani is served in dried palm leaf cups called ‘Donne’ hence the name of this biryani is ‘Donne Biryani’. Donne Biryani is made with Seeraga Samba/Jeeraga Samba rice. Preparation of Donne Biryani is different from the preparation of other biryanis. This biryani is not prepared by dum process. It is a pulao style biryani made with special blend of spices and herbs. Main flavor of this biryani comes from the combination of herbs like mint leaves and coriander leaves. You can prepare this biryani with chicken or mutton. In this biryani you no need to cook rice separately. It’s preparation is similar to that of pulao because rice is cooked in the stock of chicken or mutton in this biryani. Ingredients


Mutton Pieces-500 gm

Turmeric Powder-1/2 tsp

Kashmiri Redchilli Powder-1 tsp

Coriander Powder-1 tsp

Ginger Garlic Paste-1/2 tsp

Curd-2 tbs

Salt to taste

Handful of coriander leaves

Handful of mint leaves

Green chilies-3

Onion-half + 2 thinly sliced

Seeraga Samba Rice/Jeeraga Samba Rice-3 cup

Water-4 1/2 cup

Tomato-1 (Chopped)

Lemon Juice-1/2 of a Lemon

Ghee-2 tbs

Oil-3 tbs

Cinnamon Sticks-2

Cloves-4

Cardamom-3

Sahi Jeera-1/2 tsp

Fennel Seeds-1/2 tsp

Method Of Preparation

  • In a bowl take mutton pieces. Add turmeric powder, Kashmiri redchilli powder, ginger garlic paste, curd and salt to taste in it. 
  • Mix everything well and marinate the mutton pieces.
  • Set this aside for 1 hour.
  • In a mixer add handful of coriander leaves, handful of mint leaves, green chilies and onion. Grind it to a paste & Keep it aside.
  • Take a pressure cooker. Add 1tbs oil in it. Add the marinated mutton pieces in it.
  • Close the lid of the pressure cooker. 
  • Pressure cook it for 3 whistles. (Medium flame).
  • Mutton pieces are 60% cooked. Keep it aside.
  • In a kadai add 2tbs ghee and 2tbs oil. 
  • Add cinnamon sticks, cloves, cardamom, sahi jeera and fennel seeds in it.
  • Once spices begin to sizzle, add thinly sliced onion in it. 
  • Sauté it until onion turns light golden brown in color.
  • Add ginger garlic paste in it.
  • Mix it well.
  • Add turmeric powder, coriander powder and redchilli powder in it.
  • Saute it until raw smell of powders goes off.
  • Add chopped tomato in it.
  • Saute it until tomato is cooked well.
  • Add cooked mutton pieces in it.
  • Mix it well.
  • Add grounded paste in it.
  • Mix it well.
  • Cook it until water is absorbed.
  • Add 4 1/2 cup water in it.
  • Add salt to taste in it.
  • Mix it well.
  • Add seeraga samba rice in it.
  • Add lemon juice in it.
  • Mix it well.
  • Cover & Cook on low flame until water is absorbed and rice is cooked well.
  • Once water is absorbed and rice is cooked well, mix everything well. 
  • Mutton Donne Biryani is now ready to serve.
