Ingredients
Ghee- 2tbs
Vermicelli / Semiya-2 1/2 cup
Cashewnuts-10
Raisins-10
Chicken-1/2 kg
Onion-2
Ginger-1 tbs, finely chopped
Garlic-1 tbs, finely chopped
Turmeric powder-1 tsp
Redchilli powder-1 1/2 tsp
Coriander powder-1 1/2 tsp
Garam masala-1 tsp
Pepper powder-1/2 tsp
Salt to taste
Curd-1 tbs
Curry leaves, Coriander leaves, Mint leaves- handful
Lemon Juice-1/2 of a lemon
Oil for Deep frying
Water-3 1/2 cup
Method Of Preparation
- Heat ghee in a pan. Roast cashewnuts and raisins until it turns light brown in color
- Transfer it into a bowl and keep it aside
- Again add 1tbs ghee in a pan and heat it. Add vermicelli into it and roast it until it turns light brown in color
- Transfer it into a plate and keep it aside
- Marinate the chicken pieces with turmeric powder, redchilli powder, coriander powder, garammasala, pepper powder, salt to taste and curd for 30 minutes
- Heat oil in a pan and deep fry the chicken pieces until the chicken pieces are cooked well & turns golden brown color in both sides
- Drain the excess oil on a tissue paper and keep it aside
- Heat oil in a kadai. Add chopped ginger and garlic in it and saute it until it turns light brown in color
- Add finely chopped onion into it and saute it until onion turns golden brown in color
- Add turmeric powder, redchilli powder, coriander powder, garam masala in it and saute it until raw smell of powders goes off. Add the fried chicken pieces in it and mix well
- Add a handful of curry leaves, coriander leaves and mint leaves in it. Saute it for few seconds. Add lemon juice in it and mix well
- Add water in it, then add salt in it and mix well.
- Add roasted vermicelli/semiya in it and mix well
- Add 1/2 tsp garam masala and roasted cashewnuts and raisins on top.
- Close it with a lid and cook it until water is evaporated and semiya is cooked well
- Delicious vermicelli/semiya biryani is now ready to serve
