Biryani is my all time favorite dish. I think most of us like biryani. I learned to cook dum biryani as I love to eat biryani. We all usually prepares dum biryani with chicken,mutton or with any other non-veg items,but for a difference I prepared dum biryani with mushroom. This biryani was very tasty. Just follow the recipe I am posting here. then you can understand how easy is to prepare this mushroom dum biryani. Once you got the taste of this biryani, I am sure that you will try to prepare it again and again. Let us come to the recipe. Try this recipe and let me know how it turned out for you


For the gravy/masala

Oil-3 to 4 tbs
Whole spices- (cinnamon-1 piece, cardamon pods-4-5, cloves-4, Dry bay leaf-1)
Mushrooms-200 gms, cleaned and sliced
Carrot-1, cut in to small pieces
Onion-1,finely chopped
Ginger garlic paste-2 tsp
Turmeric powder-1/4 tsp
Red chili powder-1 tsp
Coriander powder-1 1/2 tsp
Garam masala powder-1/2 tsp
Cilantro leaves-few springs
Yogurt-1/2 cup
Salt to taste

For the rice

Ghee-1 tbs
Rice-1 cup
Water-2 cup
Salt-1 tsp
Lemon Juice-2 tsp

For Topping

Oil-3 tbs
Onion-1,finely sliced
Cashew nuts and raisins-6-8each
Ghee-1 tbs
Cilantro and mint leaves-a few springs
Saffron-a small pinch,soaked in 2 tbs milk

Method of Preparation

For Cooking the rice:
  • Wash the rice in cold water 2-3 times and drain completely
  • Heat ghee in a large pot. Add the drained rice and toast gently on medium heat
  • Next add required amount of water ,salt and lemon juice to the rice.Bring to a boil and lower the heat. Cover and cook till the rice absorbs all the water
  • Once cooked, fluff the rice and spread on a large plate,so that they don’t stick together

For Topping:

  • Heat oil in a pan.Fry the cashew nuts and raisins till golden and keep it aside
  • Next add finely sliced onion and fry till golden brown in color. Remove on to a paper towel and spread them so they stay crisp while cooling. This will be used for topping

For gravy/masala:

  • Wash the mushrooms and wipe it off with a tissue paper to remove the moisture and chop the mushrooms into halves or quarters
  • Heat oil in pan. Add the whole spices,Saute for a minute
  • Add onions and fry till they turn golden brown in color.
  • Add ginger garlic paste and saute for a minute
  • Add mushrooms in it and saute for 2 minutes.Then add carrots in it and mix well. cook it for 5 minute
  • Add turmeric powder,redchili powder,coriander powder and garam masala powder in it and mix well
  • Add cilantro leaves in it cook for few minutes
  • Finally add yogurt and salt in it and mix well,masals is ready
Dum Process:
  • In a large deep pan spread a tablespoon of ghee and a small amount of gravy/masala at the bottom. Spread half of the rice next. Then spread half of the fried onions.cashew nuts, raisins and cilantro leaves on top
  • Next add the remaining gravy/masala. Then add the remaining rice..Finally add the remaining fried onions.cashew nuts, raisins and cilantro leaves on top.
  • Pour the saffron milk all over on top
  • Close the pan tightly and place it on a tawa and heat it. It has to cook on a low heat for 30 minutes.This is the dum part
  • After 30 minutes open the lid and mix it gently
  • Mushroom dum biryani is ready to serve hot
