Sarkara varatti is the banana chips coated with jaggery. It is must for Kerala sadhya. We usually bring that from stores as I don’t know how to prepare this, but for this vishu I prepared sarkara varatti at home. You can also prepare sarkara varatti at home by just following this recipe

Ingredients
Unripe raw plantains-3
Jaggery-1 cup
Powdered sugar-2 tbs
Cumin powder-1 tsp
Cardamon powder-1 tsp
Dried ginger powder-1 1/2 tbs
Oil for frying
Method Of Preparation
- Peel the outer skin of the bananas and immerse them in the turmeric powder for 20 minutes
- Remove the bananas from turmeric powder and pat dry.
- Cut each of them into half lengthwise
- Cut each of them into 1/2 cm thick pieces again and keep it aside
- In a frying pan pour the oil and heat it at medium flame
- When the oil is hot add the banana pieces in it and fry it on medium flame.Stir occasionally until the banana pieces become golden yellow/crisp(at least 30 minutes)
- Take the chips out of the oil and drain the excess oil from the chips using tissue paper and let it cool down
- In a thick bottomed pan heat jaggery and water till jaggery melts,Heat on medium flame and stir frequently till it reaches a thick consistency(The jaggery syrup should be of 1 string consistency)
- Add cumin powder,powdered sugar and cardamon powder to the jaggery syrup
- When the jaggery syrup reached at right consistency lower the heat and add the fried banana pieces in it
- Mix well and stir continuously in order to prevent the chips from sticking to each other
- Switch off the flame then add dried ginger powder and powdered sugar in it and mix well
- The Tasty Sweet Sarkara Varatti is ready to serve.Keep them in an air tight container
