Appam( without coconut milk ) and Turkey stew

Appam is a type of pancake made with fermented rice batter and coconut milk..It is a very popular and traditional breakfast of kerala…In this recipe i used only Rice batter and Poha(Rice flakes).I didn’t use coconut milk in this recipe…It is very easy to prepare this batter and adding rice flakes makes the appam soft

Cooking Time:15 minutes
Servings:8-10 appams

How to make soft appam without coconut milk


Ingredients needed

Raw Rice-1 cup
Rice flakes- 1 cup
Yeast-1/2 tsp
Sugar-2 tsp
Salt to taste

Method of  Preparation
1.Wash and Soak the rice for 5 to 6 hours.
2.Wash and Soak the rice flakes for 3 to 4 hours
3.Drain the water then grind rice and rice flakes separately in a mixer till smooth
4.Add a little lukewarm water in yeast and mix well
5.Add this to the grounded  rice mixture
6.Add sugar and salt in to this mixture and mix well
7.The batter should be of thinner consistency than idly batter
8.keep it aside for 10 to 12 hours or overnight for the batter to ferment and rise
9.Heat an Appam Kadai or a Non-stick Pan and grease it lightly with oil,Reduce the heat to low
10.Pour a laddle of batter in the center of Pan and rotate the Pan in circular motion so that thin layer forms in the side while the middle remains thick.
11.Cover and cook for a minute,remove the appam when the middle part is cooked

Turkey stew

Unlike chicken,turkey has tougher meat and hence needs to be cooked longer but otherwise making the curry is easy.After cooking the meat pieces becomes so soft and tasty..Now lets see how to make this delicious turkey stew.

Ingredients needed

1.Turkey-Around 1/2 kg ,cut into medium size pieces
2.Onion-1,thinly sliced
3.Ginger Garlic Paste-1/2 tbs
4.Green chillies-3-4
5.Curry leaves-1-2 springs
6.Whole spices-(cardamon-1-2, cloves-6, bay leaf-1,cinnamon stick-1 inch,whole pepper-5-6
7.Potato-2 small,cubed
8.Thin coconut milk-1 cup
9.Thick coconut milk-1/2 cup
10.Pepper powder-1/4 tsp
11.Coconut oil-1 tbsp
12.Salt-As required
Method of Preparation

1.Clean and cut turkey in to medium size pieces
2. In a deep pan heat some coconut oil,add whole spices and saute for a few seconds.Now add sliced onion,ginger garlic paste,green chillies ,curry leaves and salt to taste.
3.When the onion becomes transparent add potato and turkey pieces,after that add 1 cup thin coconut milk .cover with the lid and cook at medium flame ,stir occasionally.It will take at least 30-45 minutes for the  turkey to get cooked
4.When the turkey is cooked well add thick coconut milk,1/4 tsp Pepper powder,few curry leaves and mix well.Cook for 1 minute at low flame.check for salt..Switch off.
Tips:
1.You can prepare chicken and mutton stew in the same way
2.You can mix coconut milk powder in 2 cups of warm water for making coconut milk(make sure you don’t leave any lumps)
