Last time I posted the recipe of kuzhi paniyaram. This time i tried the sweet version of paniyaram. It is also known as unniappam in malayalam. It is very easy to prepare. You no need to use idli/dosa batter for preparing this paniyaram. I used rice flour, jackfruit and jaggery syrup for preparing this paniyaram. Normally we will add mashed bananas in the unniappam batter, but for a variety I added jackfruit in this unniappam/ sweet paniyaram batter. It came out well. It was very tasty than the normal unniappam / sweet paniyaram, that we prepare with mashed bananas. Ingredients
Roasted Rice Flour-1 cup
Ripe Jackfruit bulbs-5 nos
Cardamon powder-1/4 tsp
Baking soda-a pinch
Salt-a pinch
Black seasame seeds-1 tsp
Ghee-1 tbs
Coconut pieces-1/4 cup
Jaggery syrup-1 1/2cup(or as required)
Method Of Preparation
- Chop jackfruit bulbs into small piece
- Grind the jackfruit pieces into a smooth paste in a mixer
- Heat ghee in a pan
- Roast the coconut pieces in ghee until it turns golden brown in color. Keep it aside
- Take Rice flour in a bowl
- Add the grounded jackfruit paste into it
- Add the roasted coconut pieces into it
- Add cardamon powder, black seasame seeds, salt and baking soda into it
- Add the jageery syrup into it and mix everything well
- Add water, if needed
- Batter should be in running consistency neither too thick nor too thin.
- Heat a paniyaram/unniappam pan.
- Add oil in each mould and heat it
- Pour a spoonful batter in each mould up to 3/4 full
- Cook it for few minutes
- Once the edges turn golden brown, flip over the paniyaram to the other side
- Cook the other side also until it turns golden brown. Remove from pan using a spoon
- Unniappam is ready to serve hot
