These are rice pancakes fried in ghee.Ney means ‘ghee’ and appam means ‘pancake’ in malayalam. It is a traditional Kerala sweet snack. We usually make this for vishu. Neyyappam is an essential ingredient for vishu kani. I am posting here the easy method for making neyyappam. You can also try this recipe for vishu

Servings:8 Neyyappams
Ingredients
Rice flour-2 cups
Mashed small bananas-2
Melted jaggery-1 1/4 cup
Black seasame seeds-1 tbs
Coconut chunks(fried in ghee)-1/4 cup
Ghee-1 tbs
Salt-a pinch
Method Of Preparation
- To the rice flour add mashed bananas, seasame seeds and a pinch of salt and keep it aside
- Melt the jaggery with little bit of water
- Add this to the rice flour mixture
- Make a medium pouring consistency batter by adding little bit of water,if needed
- Add fried coconut chunks and ghee in the batter and keep it aside for about 2 to 4 hours
- Heat oil in a deep bottomed kadai, when the oil is hot pour a laddle of batter in the oil. Deep fry both sides of the appam
- Tasty neyyappam is ready to serve hot
