Chef Pillai Chicken Curry Recipe-Authentic Kerala Style Chicken Curry with Video Recipe. Chef Pillai Chicken Curry is a famous Kerala-style chicken curry known for its rich aroma, bold spices, and traditional South Indian flavors. Inspired by Chef Suresh Pillai’s signature cooking style, this recipe uses freshly ground spices, coconut, curry leaves, and slow-cooked chicken to create a restaurant-style curry at home.

This authentic Kerala chicken curry recipe stands out for its perfect balance of heat and flavor. The use of coconut oil, shallots, ginger, garlic, and roasted spices gives the curry a deep, earthy taste that pairs beautifully with Kerala parotta, appam, idiyappam, dosa, or steamed rice.

What makes Chef Pillai Chicken Curry special is the traditional tempering and slow-cooking method that allows the chicken to absorb all the spices. The curry is thick, spicy, and aromatic—just like the one served in top Kerala restaurants.

If you are looking for a restaurant-style chicken curry recipe, this Chef Pillai inspired dish is perfect for family lunches, festive meals, or weekend cooking. It is easy to prepare, highly flavorful, and loved by all spice lovers.
