Cucumber Under Wraps
 
Ingredients:
½ cup Spread able plain or herbed cream cheese                      4 flour tortillas
1 cucumber piece 6 inches long (15cm), ¼ lengthwise   Salt & Pepper
 
On each tortilla, spread 2 tbsp. cream cheese. Set 1 cucumber spear on one edge of the tortilla. Sprinkle salt and pepper if desired, then roll each tortilla around cucumber and serve. Yield – 4 wraps.

Tuna Schooners
 
Ingredients:
 
2 (3-ounce) cans water-packed light tuna, drained         ½ cup apple finely chopped
¼ cup carrot shredded                                                  1/3 cup reduced-fat ranch salad dressing
2 English muffins, split and lightly toasted                      
8 triangular-shaped baked whole wheat crackers or tortilla chips
 
In a mixing bowl combine tuna, apple, carrot and salad dressing. Spread ¼ of tuna mixture over each muffin top. Stand the 2 crackers and firmly press them into the mixture so that it forms a sail on each muffin. Yields – 4 servings.

Fruit Kabobs
 
Ingredients:
 
1 apple cubed                                                                           Handful of cubed pineapple
Handful of cubed watermelon                                                    Handful of grapes
Any other fruit your kids love!
 
Place the variety of fruit on a wood skewer in any order you desire. Your kids will find this kabob very interesting and they will love eating all of the fruit from it.
