Gourmet Appetizers’ Pickled Eggs
 
Ingredients:
  • 2 cups vinegar                                                   1 medium onion, thinly sliced                        
  • 2 Tbsp sugar                                                     2 tsp mixed pickling spices
  • 2 tsp curry powder                                            1 tsp salt
  • 12 hard-cooked eggs, peeled
 
In a medium saucepan, combine all of the ingredients but the eggs and bring to a boil. Reduce heat; simmer until onion is tender, approximately five minutes. Use two 1-qt (1 liter) jars and place 6 eggs in each. Split the hot vinegar mixture between both jars and cover with tight fitting lids. Refrigerate for several hours or over night.
 
 
Gourmet Appetizers’ Salsa
 
Ingredients:
·         4 cups chopped onions                                 8 cups chopped skinned tomatoes
·         1 cup red pepper                                           2 cups chopped green peppers
·         4 cups chopped mixed peppers                    2 cups vinegar
·         2 cups chopped celery                                  6 tsp salt
·         2 tsp coriander                                               2 tsp cumin
·         ¼ cup sugar
 
            Combine all of the above ingredients in pot and bring to a boil. Boil for 15 minutes till on the tender side, stirring quite often. Then add another 12 skinned chopped tomatoes, 7-8 Jalapenos peppers chopped and 3 large cans (or 6 small) of tomato paste. Put in pint jars, seal and process for 20 minutes. 
            Note – If you like it hot like I do, then add extra Jalapenos for more zip!  
 
Gourmet Appetizers’ Quick Cheese Toast
 
            Ingredients:
  • 1 cup grated parmesan cheese                                       ½ cup light mayonnaise
  • ¼ tsp garlic powder or 1 minced garlic clove                   Italian or French Bread
 
In bowl, mix cheese, mayonnaise and garlic. Then spread cheese mixture onto slices of bread and place on a baking sheet; broil for 1-2 minutes or until cheese bubbles and becomes golden brown. Serve hot. Note – refrigerate spread until ready to use. This toast is tasty alone or with soup/stew.
