Various Cooking Tips for Chicken Recipes
 
  • Do not bake chicken on high heat for your chicken recipes as the chicken results in a drier, stringier piece of chicken. Bake on medium heat.
  • Some chefs submerged chicken parts in buttermilk in the refrigerator for a couple hours to improve the taste of their chicken recipes.
  • Try placing bacon strips in alternating directions (helps hold bacon in place) on the top of the chicken breast while baking the chicken to help keep the breast moist for your chicken recipe.

Smothered Chicken Recipe

 
4 - chicken breasts                                                       8 oz - shredded cheddar cheese
1 cup - diced tomato                                                    1 cup - diced green onion
1 cup - diced green pepper                                        1 tbsp - butter or margarine
 
  • Bake chicken breasts in oven at 375 for 30 minutes or until cooked thoroughly.
  • Sauté the tomato, green onion and green pepper in 1 tbsp of butter or margarine in a separate pan. Place mixture evenly over chicken breasts. 
  • Sprinkle 2 ounces of cheddar cheese over each chicken breast. Broil in oven for 3 minutes or until cheese is slightly brown and bubbling.

Sweet & Sour Chicken Recipe
 
¼ cup - Pineapple juice                                                3 Tbsp - Brown Sugar
2 Tbsp - Balsamic Vinegar                                          2 Tbsp – Lime Juice
2 Tbsp – Dijon Mustard                                                2 Tsp – Cornstarch
 
 
  • In a small bowl, mix these ingredients and set the bowl aside.
 
4 Tsp – Canola Oil                                                      1 lb–chicken breasts cut into 1”cubed 
1 cup – Red Pepper chopped                                     ½ cup chopped onion
1 – Garlic Clove                                              
 
  • Heat large frying pan and then add in 2 Tsp of Canola Oil, add in chicken and stir fry for approximately 4 minutes or until browned. Then place chicken on another plate.
  • Then, add 2 more tsp of canola oil, chopped red pepper, chopped onion and minced garlic clove to the hot frying pan and stir-fry until onion softens.
  • Add the chicken in. Stir in the pineapple juice mixture.
  • Heat and stir for 1 minute until the sauce boils and thickens.
